Here's a delicious brunch dish for the holidays. Garnish with red and green pepper rings overlapped in the center for a festive touch.
Spinach Cheese Strata
- Prep: 15 min. Bake: 45 min. + standing
- Yield: 6-8 Servings
Ingredients
- 1/2 cupchopped onion
- 1/4 cupchopped sweet red pepper
- 1/4 cupchopped green pepper
- 2 tablespoonsbutter
- 1 package(10 ounces) frozen chopped spinach, thawed and well drained
- 2 cupsWheat Chex
- 1/2 cupshredded cheddar cheese
- 1/2 cupshredded Swiss cheese
- 6 eggs
- 2 cupsmilk
- 1/3 cupcrumbled cooked bacon
- 1 teaspoonDijon mustard
- 1 teaspoonsalt
- 1/4 teaspoonwhite pepper
Directions
- In a large skillet, saute the onion and peppers in butter until crisp-tender. Remove from the heat. Stir in spinach and cereal. Spoon into a greased 11-in. x 7-in. baking dish. Sprinkle with cheese.
- In a large bowl, combine the eggs, milk, bacon, mustard, salt and pepper. Pour over cheese. Bake at 325° for 45-50 minutes or until knife inserted near the center comes out clean. Let stand for 10 minutes before cutting. Yield: 6-8 servings.
